Black Bean Brownies


1 can Black Beans, rinsed.

4  large or 5 medium eggs

6 tbsp, Sweet ground cocoa

1/2 cup raw sugar

1 tsp baking soda

1 tsp vanilla

Heat over to 350 degrees. Combine ingredients in a blender or food processor and mix for 2 minutes (the batter will be really runny) Pour into a greased 8′ pan and bake for 40 minutes.

Chocolate Buttercream Frosting  (Optional)

1/4 cup butter melted

3 tbsp half and half

1/2 c sweet ground cocoa

1 cup confectioner’s sugar

dash of salt

1/2 tsp vanilla

Combine butter, half n half and cocoa in a  saucepan and stir over low heat until butter melts. Remove form heat and slowly stir in sugar, salt and vanilla. Beat until smooth, pour over brownies. Cut into squares.

Tips: I have found these keep well in the fridge and Ghiradeli sweet ground cocoa tastes the best!  Enjoy!
